Few food beliefs are as widespread as "fresh is always better than frozen". It sounds logical: fresh evokes the orchard, frozen evokes industry. But when you look at the real journey each piece of fruit takes from the tree to your cup, the conclusion surprises most people: for many fruits, freezing is the most honest form of preservation there is. Here is why, with the full chain on the table.
The real journey of "fresh" fruit
The fruit you buy "fresh" in January was rarely picked yesterday. To survive weeks of transport and storage, much of it is harvested before it ripens — green, firm, resilient — and ripens artificially along the way, in chambers or on the shelf itself. That process has three costs:
- Nutritional: fruit picked green never fully develops the sugars, aromas and micronutrients it would have accumulated ripening on the plant. And from harvest onwards the clock is ticking: vitamin C, particularly sensitive, degrades day by day with light, oxygen and temperature.
- Sensory: mealy texture, flat flavour — the familiar disappointment of fruit that looks beautiful and tastes of nothing.
- Waste: some of that fruit survives neither the journey nor the fridge at home, and ends up in the bin.
None of this makes fresh fruit a bad choice — a seasonal, locally grown piece is unbeatable. But the supermarket's "fresh" label generally describes appearance, not history.
What exactly happens when freezing at -18 °C
Fruit destined for freezing follows a different chain from the start. It is picked at peak ripeness — because it does not need to survive any journey in a firm state — and frozen within a few hours of harvest using IQF (Individual Quick Freezing): each piece of fruit is frozen separately in a matter of minutes with very cold air.
The technical detail that changes everything is speed. In slow freezing (like a domestic freezer), the water in the fruit forms large ice crystals that puncture the cell walls: on thawing, the fruit loses juice, texture and some of its nutrients. With IQF, the speed means microcrystals form, so small that the cell structure stays intact — the fruit keeps its texture, its juice and its vitamins as at the moment of harvest. From there, the cold stops the clock:
- The vitamins are locked in at the level they were at the moment of freezing — which is the maximum for ripe fruit. Various analyses have found frozen fruit retaining vitamin C levels equal to or higher than the same "fresh" fruit after several days of home storage.
- Flavour and colour hold, because degradation reactions are practically stopped at -18 °C.
- No preservative is needed: cold does all the work. The ingredient list of quality frozen fruit is… the fruit.
With a controlled cold chain, that state holds for up to 2 years. It is not an approximation of ripe fruit: it is ripe fruit, on pause.
Why this matters (a lot) in a smoothie
For the specific case of a smoothie, frozen fruit is not a compromise: it is the best possible raw material, for four reasons:
- Texture without dilution. A fresh fruit smoothie needs ice to be cold — and ice waters it down. Blended frozen fruit produces that dense, creamy, icy texture on its own.
- Absolute consistency. January's Green Power tastes like August's, because the fruit was frozen at its peak. A machine product needs that repeatability: customers come back for the flavour they remember.
- Food safety. At -18 °C microbial growth is halted. Together with the 30-second self-clean after every serving, the whole chain is designed so each cup starts in perfect condition.
- Zero waste. No fruit over-ripening in a chamber, no daily losses: each frozen portion waits for its order for as long as it takes.
Three myths worth retiring
"Freezing kills the vitamins." In practice it is the opposite: freezing stops degradation. The vitamin C in a strawberry frozen at source is waiting intact; the vitamin C in a strawberry that has spent ten days between chambers and fridges is largely gone.
"Frozen fruit contains preservatives." It does not need them — that is precisely the point. Cold does the entire job. The ingredient list of quality frozen fruit is the fruit itself, and nothing else.
"Frozen means low quality." The sector's paradox: fruit that gets frozen is usually the fruit picked at its peak — because freezing allows that luxury — while some long-distance "fresh" fruit is picked green out of logistical necessity. The quality label is often in the freezer.
The angle almost nobody mentions: waste
A third of the food produced worldwide is lost or wasted, and fresh fruit is one of the hardest-hit categories: losses in store, fruit over-ripening at home, pieces discarded for looking imperfect. Freezing tackles that problem at the root:
- At source: ripe fruit gets frozen instead of being discarded for not surviving transport in a fresh state.
- At destination: nothing expires in a fridge; each portion waits, frozen, until someone orders it.
- In the cup: portioning by recipe eliminates preparation leftovers.
For a vending operator, this is the difference between throwing away product every week (the fresh-packaged fridge model) and throwing away practically nothing. And for the planet, every kilo of fruit not wasted is water, soil and transport not spent in vain.

In three weeks, compare: the "fresh" one, by then almost a month from harvest, will be soft, dull and half its aroma gone; the frozen one, when blended, will release the flavour of the day it was frozen. It is the same principle that explains why fine-dining chefs work with frozen fruit and vegetables without embarrassment: it is not a concession, it is a quality tool.
